This cheese is the perfect middle point between a farm cheese and a total experience. Made with cow's milk in the Burgundy region of France the cheese is brushed with a solution of brine and Marc de Bourgogne. The cheese ages for a total of 6 weeks and the affineur increased the amount of the Marc de Bourgogne liqueur with time. This results in a rind that is aromatic and rich in color. The smells are yeasty and the taste has a lot of notes of cooked pancetta.
Uses:
A cheese that needs to be enjoyed alongside nice crackers. Look for those with added flavors like rosemary or even truffles. The combination will be rich and filling.
Pairings:
We love to eat this cheese alongside a nice IPA. The acidity and bitterness of the beer will balance deep umami and savory flavors of the cheese.
