Perhaps one of the most iconic farm cheeses of France. This cheese from the Savoie region is often imitated around the world, but the unique terroir of its region of origin make this a unique cheese. It is lightly pressed for a semi-soft texture and aged from 2-4 months. It's a mountain staple made from skimmed milk left over from butter making and it radiates a rustic simplicity. The cheese can have some tang at early stages of maturation, which develop into nice savory deep notes as it ages. The smell is earthy.
Uses:
A perfect cheese to snack on with fruit and dried nuts. Crusty baguette is also a natural accompaniment.
Pairings:
A dry cider will be the best combination for this cheese. If you enjoy mead, try one with fruity notes for a truly countryside experience.
